White almond or peeled almond, is the skinless almond. The peeling of the almond is done through a purely physical operation, which involves removing the skin of the whole almond with steam humidification.
The almonds are dried by dehydrator (less than 40°C). This soft and natural drying improves their digestibility, develops their flavour, while preserving their valuable unsaturated fatty acids.
Then they are ground by millstone and put into jars.
Almond butter is essential for cooking instead of using animal fats.
Direction: It can be incorporated at the end of cooking vegetables for example, and is an excellent alternative to cream. It is also used to supplement the diet of young children.
Recipe idea: Almond milk
Mix two tablespoons of white almond butter with a little water.
When you have the cream consistency then add the remaining water until you get the milk consistency.
