White sesame or tahini, is husked by us. This unique and original mechanical processdoes not use salt or chemical additives. Tahin retains practically all the nutritional qualities of whole sesame, except the silicon which is concentrated in the skin of sesame. It is dried by hot air and then ground by millstone.
It contains naturally more lecithin than the whole sesame, which makes it easily emulsifiable even in cold water and makes its use very convenient in the kitchen.
Direction: Sesame butter can be spread as it is or with honey. It is used mainly in cooking instead of cream.
Recipe idea: Cucumbers with white sesame.
Cut two cucumbers in slices and sprinkle with salt. Add a tablespoon of tahini and mix. Leave to rest 15 minutes. Then mix again and put some parsley.
